This weekend I enjoyed a fun side trip to Knife River, MN with my Mom. Located midway between Duluth and Two Harbors on the Scenic Highway, Knife River is a cute little town to visit on your way up the Shore or during a stay at one of our properties in that area. Knife Island Superior is right around the corner!

Our first stop was at Great! Lakes Candy Kitchen. While living out of state, I always looked forward to receiving some of their toffee or other goodies in the mail. I picked out a few items, including some chocolates made at their shop, my favorite licorice wheels, and a treat for a furry friend. To avoid digging into our loot right away, we decided to grab some lunch across the road at the Lighthouse at Emily’s.

The Lighthouse at Emily’s has taken over a location that has long been the center of the community, which started as a general store and has been a post office, restaurant, and bed & breakfast over the years. We decided to take advantage of the beautiful day and enjoy our lunch on the deck, overlooking the river. My Mom and I both choose one of their specialty burgers: the veggie wild rice burger and the smoked salmon burger. We’d recommend both! And to top off our wonderful afternoon, our meal concluded with the North Shore Scenic Railroad train chugging by. After a few waves to the passengers, we were back on our way, reminding ourselves to save our goodies for later…
